The climate and environmental conditions, the methods of cultivation of vines and olive trees, the harvest, still done by hand and the attention to the right degree of ripeness are a guarantee of authenticity and quality.
The olive trees ( the types of: moraiolo, leccino and frantoio) located around the borgo are about 4.000 and the cold pressing of the olives in the day of collection in the nearby mill guarantees an harmonious and fruity aroma to our olive oil. A strong but balanced character, the presence of an aromatic bouquet of flavors makes it ideal for more traditional recipes of our region such as spelt soup, bean soup, ribollita (bread soup with vegetables), pappa al pomodoro (bread and tomato soup), panzanella (a bread based cold, summary dish) or the simple "fettunta" (toasted bread with olive oil), as well as for the most innovative recipes.
Fontebussi's wine is a Chianti Colli Aretini D.O.C.G. made from organically grown grapes bottled “at the origin” by Mannucci Droandi SCA. The production of oil and wine in this area has an ancient tradition handed down from generation to generation. Large forests have been transformed over the years in vineyards and olive groves enhancing the extraordinary landscape of Tuscany.
